For a quick on-the-go breakfast, overnight oats are a life-saver for crazy mornings! There are countless recipes for oats, but of course we are featuring all things pumpkin this month, so below is a recipe for pumpkin pie overnight oats inspired by this recipe from the blog Rabbit Food for My Bunny Teeth. Oats are a wonderful breakfast that keeps you full until lunch! You can eat the oats cold, right out of the fridge or slightly warmed up. Enjoy!!

Serves 1

Ingredients:
½ cup unsweetened almond milk (or milk of choice)
¼ cup rolled oats
¼ cup canned pumpkin puree
1 Tbsp chia seeds
½ Tbsp pure maple syrup or honey
½ tsp pumpkin pie spice

Combine all ingredients in a jar (I like to use small mason jars) and mix. Place in the refrigerator overnight and grab on the way out the door the next morning.

Note: Prepared oatmeal will keep up to about 5 days in the fridge.

Optional toppings- raisins, craisins, granola, or nuts.
