Easy Tortilla Pizza
I may be biased… but I believe everyone loves pizza! Who wants to turn taco leftovers into a Make Your Own Pizza dinner? Check out this recipe inspiration from one of my favorite bloggers. Also – let me know how it goes!
Ingredients:
1 flour tortilla
A little bit of pasta sauce (1/4 cup max)
A little bit of shredded mozzarella cheese
Your fave pizza toppings: sauteed veggies, cheese, precooked meats, etc.
Instructions:
Preheat oven to 425°F
Spread sauce over the tortilla.
Sprinkle the shredded cheese on the tortilla.
Add any precooked meats, sauteed veggies, pineapple, other toppings etc.
Bake tortilla pizzas for 7-9 minutes or until edges are browned and cheese is bubbling.
Sprinkle on the final toppings: basil, parmesan, ketchup, etc. 🙂

Another crust option I’ve seen is making it with butternut squash or a cauliflower crust (you can buy those pre-made). For the tomato sauce, I add diced tomatoes instead of sauce and skip out on some of the sugar and other stuff that comes in the sauce and I season it with basil, oregano, garlic, etc.
I’m just here to say that Pineapple is NOT an acceptable pizza topping!
